You may have seen the videos circulating, but nothing compares to the real experience of watching street food made in front of you. Bubble Waffle Shoppes of Milwaukee, Wisconsin, specializes in production of Hong Kong Egg Waffles, as found on the streets of Hong Kong, creating cones out of waffles the shape of bubble wrap, often filled with ice cream and toppings.
Owner Albert Yee says he knew these egg waffles could be a huge success in the U.S. After trying bubble waffles five years ago, he located a manufacturer of the waffle iron and purchased three immediately. “It wasn’t until recently, however, that I took them out of the box,” says Yee. Since developing the perfect recipe with a friend, Yee has been taking his creations to private events all over, including the Super Bowl in Minneapolis.
“My favorite Bubble Waffle signature item is the Lemon Berry Tart Parfait,” says Yee. “We start with our signature Bubble Waffle and fill it with French vanilla ice cream. We top it off with a blend of mixed berries, use either crushed graham cracker or, my favorite, crushed Wild Berry Pop Tart, then top it off with blueberry compote and homemade lemon curd.” When Yee sets up shop at your event, you’ll watch the line form and wonder why you ever served anything but these delicious confections!
